cinco de mayo and mangos

I realized late yesterday afternoon that it was Cinco de Mayo. I thought it would be fun to do a bit of a Mexican-themed dinner and needed a couple of things from the market. They were having a special on mangos, which we love, love, love. This only about half of what was in the box, but we have already eaten the other half!

I threw together some tacos and made a taco salad for myself.

It was delicious and very filling, since it was huge! I’ve been trying eat more main dish salads lately to up my veggie intake. Even the kids are on board (mostly). We’ve done Grilled Chicken Caesar Salad, Tri-tip Salad, Taco Salad, and Chinese Chicken Salad to name a few.

In knitting news, I started knitting the Tea Leaves Cardigan back in November and have been progressing very slowly with it. I’m on the first sleeve now and a very kind woman at a knitting shop showed me the magic loop method since my dpns were perilously short for the sleeves. I had tried that method before, and didn’t really care for it, but it seems to be working quite well this time. I just need some serious movie viewing time to get this off the needles. It will be full-blown summer here before it’s done and I’ll probably have to wait until next November to wear it (sigh).

I’ll leave you with a picture of the delicious, juicy mango I ate for lunch. We are pretty much a one-mango-per-person family. And I will confess that I stand over the sink and chew on the seed to get every last bit.
